Cooking it while cold will prevent heat from penetrating to the middle sufficiently. PAN: Heat a heavy-duty, thick-based frying pan or griddle pan on high until smoking hot. We recommend cast-iron pans, as they get really hot and retain heat excellently. Never overcrowd steaks in a pan, or the heat will drop and the steaks will steam, instead of searing. Line a standard cupcake tin with 12 paper cases. Prepare the cupcake mix according to packet instructions. Spoon a tablespoon of mixture into the paper cases. Top each with a choc cookie and fill with the remaining batter until ¾ full. Bake for about 20 minutes or until cooked when tested with a skewer. Heat the butter on medium-high for about 8 minutes, until golden-brown. Remove from heat. Stir in the vanilla and sugar. Cool to room temperature. 2 Beat the eggs into the butter mixture. Stir in flour, cocoa and bicarb, until just combined. Fold in chocolate. 3 Roughly shape the dough into 30ml balls and place 5cm apart on baking paper-lined trays.
